What is the tradition of goose on St. Martin's Day?
Legend has it that St. Martin, wanting to avoid being chosen as bishop, hid in a henhouse. However, the geese betrayed his hiding place with loud honking, causing him to accept the honor. Since then, the goose has become the symbol of St. Martin's Day, and the tradition of serving it in November has survived to this day – not only in Poland but throughout Europe.

Goose is considered one of the healthiest and most noble meats – rich in iron and vitamins, and extremely aromatic. It was once a true delicacy of Polish cuisine, and today it returns to restaurant menus in a special, modern version.
